the best healthy chili recipe
Okay let’s be honest…who doesn’t love a wholesome bowl of chili on a cold fall evening?
It’s a staple in many peoples homes, as well as being a wonderful meal to make in bulk batches and use throughout the week!
This chili turned out so incredible. My whole family loved this comfort food!
Ingredients
Chili Recipe:
1.5 lb ground turkey
1 tbsp olive oil
1 tbsp fresh garlic
1 red bell pepper
1 can crushed tomatoes
1 sweet onion
One 8 ounce can diced green chilis
8 ounces chicken stock
1 can black beans
1 can pinto beans
3 ears of fresh sweet corn (can use one can of corn)
1 diced sweet potato (1/2 inch-1 inch cubes)
Spices
1 tsp Cayenne pepper
1 tbsp Chili powder
2 tsp Cumin
½ tsp Oregano
1 tbsp paprika
1 tsp garlic powder
2 tbsp cup dijon mustard
1 tbsp Worcestershire sauce
Black pepper
1 bay leaves
Heat the olive oil in a large pot on medium high heat then sweat the garlic, red pepper, sweet potato and sweet onion for 2-3 minutes until soft and fragrant. Next, add your spices (cayenne, chili powder, cumin, oregano, paprika, garlic powder, black pepper, bay leaf) and stir with the veggies for another 3-5 mins.
Add your ground turkey and allow to lightly brown for a few minutes (5-7). Add the rest of your ingredients (chicken stock, beans, corn, green chili’s, crushed tomatoes, dijon mustard, worcestershire sauce). Stir until everything is fully combined.
Allow the chili to reach a boil, then turn down the heat to medium low and allow to simmer for 45 minutes-hour (until your sweet potato is tender).
Serve with gluten free corn bread and garnish with cilantro and fresh lime!
