Birthday Cake Bites
If you are anything like me and my crazy sweet tooth… you need a sweet yet healthy snack on hand at ALL times.
These little birthday cake bites are the perfect combination of high quality fats with a dash of sugar.
Also, they are made of only two main ingredients!
Ingredients
Birthday Cake Bites:
1 cup walnuts (can use cashews or almonds if you prefer)
6 pitted medjool dates (quick soaked*)
pinch of pink salt
1/2 tsp vanilla extract
Toppings (optional)
sprinkles, coconut sugar, shredded coconut, cocoa powder
In a food processor pulse walnuts for about 1 minute until very crumbly and only a few chunky bits remain. Then add your soaked medjool dates, salt, vanilla and pulse until fully combined.
Spoon 6 tablespoon sized portions and form into balls then dust in your favorite toppings.
Store in the refrigerator for up to 10 days!
