Smoked Salmon Frittata

Breakfast and brunch is my absolute favorite meal of the day. I like that it can be either sweet or savory and there are endless options!

This smoked salmon frittata is packed with healthy fats, nutrient rich vegetables, and is high in protein.


Ingredients

  • 4 whole eggs

  • 1 red pepper (medium dice)

  • 1/2 cup white mushrooms (medium dice)

  • 5 oz baby potatoes (sliced 1/4 inch thin)

  • 1 green onion (chopped)

  • 2-3 oz smoked salmon

  • 1 tbsp olive oil

  • 1 tsp fresh dill

  • 2 oz feta cheese

  • salt and pepper to taste


Preheat oven to 400 F. In an oven proof pan sauté the red pepper and mushrooms until soft (3-5 minutes). Layer the veggies evenly on the bottom of the pan and turn off the heat.

In a separate pan heat the olive oil on medium high and cook potatoes evenly on both sides until tender (approximately 10—12 mins).

Whisk 4 whole eggs, salt, pepper, dill, together in a small bowl. On low heat add eggs to the pan of mushroom and pepper. Add your cooked potatoes and only cook the egg mixture until the egg is just set around the edges (1-2 mins). Place small pieces of the smoked salmon on the top and place in the oven for 13-15 minutes until the egg has cooked completely.

Remove from the oven, add green onion, and feta to garnish.
