Muscle Missy’s Cookie Dough Bites

As you can probably tell from my blog and any other social media sites you follow me on, I’m a huge sweets girl. I MAKE ways to fit it into my diet daily. Yes daily.

As you can guess, I recipe test in the kitchen all the time and a lot of the time I have some pretty big fails. But I also have the odd times of success, and this recipe is one of them! I’ve made these for family, friends, myself, and they are a big crowd pleaser! They have no artificial sweeteners, dairy, gluten, and paleo.


Ingredients

  • 40g Medjool dates (soaked)

  • 2 tbsp cashew butter

  • 1 tsp maple syrup

  • 1 tbsp almond flour

  • 1 tbsp coconut flour

  • 1 tsp melted coconut oil

  • 1 tbsp collagen powder

  • dairy free chocolate chips

  • pinch of pink Himalayan salt


To start, soak your medjool dates in hot water until they soften (5 mins-10 mins). Blend your dates in a food processor then add your nut butter, maple syrup, and coconut oil. You should have a sticky paste.

Remove from the food processor into a small bowl and add your dry ingredients (almond and coconut flour’s, collagen, and salt). Mix until completely combined. Then add in your chocolate chips.

Roll into mini bite size balls (5-7) and store in an airtight container in the refrigerator.
