Pumpkin Spice Mini Waffles

As the last day of summer just passed by and fall is now in our midst, I couldn’t help but create a seasonal breakfast favorite!

These maple pumpkin spice waffles are vegan and gluten free while being absolutely delicious and hitting the sweet tooth.


Ingredients

Dry

  • 40 grams oat flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1 stevia packet

  • 1 tsp pumpkin spice

    Wet

  • 70g pumpkin purée

  • 1/4 cup almond milk

  • 1 tsp apple cider vinegar

  • 1 tsp vanilla


Combine the almond milk and apple cider vinegar in a medium bowl and allow to sit for a few minutes (acts like buttermilk) while you mix the dry ingredients .

Mix all the dry ingredients in a bowl until fully combined.

Add the pumpkin purée and vanilla to the almond milk and apple cider vinegar mixture then add your wets to the dry.

Allow the batter to sit and thicken for 10 minutes then add to your sprayed waffle maker and cook according to your waffle makers instructions!

Add your favorite toppings such as dairy free yogurt, maple syrup, grass fed ghee, granola, or chocolate chips!
