Avocado toast

I’m the best of both worlds kind of girl. I love savory food but I have to incorporate something sweet on the daily… or even per meal.

Avocado toast has gained increased popularity for a reason. You can joyously have it for either breakfast, lunch, and yes I have had it for dinner. It’s a timeless dish. And extremely easy!

Ingredients

bread of your choice (my favorite is sourdough)

  • avocado

  • sliced turkey

  • heirloom tomatoes

  • lemon

  • one egg

  • everything but the bagel seasoning

  • ghee

  • favorite jam


To poach your egg, bring a small pot of water to boil. Add 1 tbsp of fresh squeezed lemon juice as your acid into the water. Create a small whirlpool by whisking your water and drop your cracked egg into the center. Reduce the heat to a low simmer and cook uncovered for 3 minutes for a soft poach.

Next, toast your bread and have all of your ingredients ready to assemble. On one slice of your bread, place your sliced turkey, half of an avocado (sliced), small handfuls of heirloom tomatoes, and top with your poached egg with salt, pepper, and everything but the bagel seasoning.

On the other slice of bread, spread a thin layer of ghee or vegan butter and favorite jam store bought or homemade (my blueberry compote recipe is in the crepe recipe on my blog).

Serve up your slices and enjoy!
